Crunchy Coconut Cornflakes


Ingredients
* 210g butter
* 160g icing sugar
* 2 egg yolk
* 2 tsp vanilla essence
* 60g desiccated coconut
* 180g flour

* Cornflakes - crush a bit (about 250g or more)

Method
* Cream butter & sugar
* Add in egg yolk and vanilla essence
* Add in dry ingredients (sifted). Mix well.
* Add in desiccated coconut
* Spoon a teaspoon batter onto cornflakes. Squeeze each cookie in your palm so that you'll have more cornflakes stick to the cookies. The dough is functioning like a glue to the put the flakes together.
* Bake in preheated oven at 150C for about 16 minutes.
